Turkey + Zoodle Bolognese
Ingredients
- 1 Tbsp avocado oil, or olive oil
- 2 carrots, diced very small
- 1 small red onion, diced
- 2 celery ribs, diced small
- 2 fresh garlic cloves, minced
- 1 pound ground turkey, lean
- 1 Tbsp oregano flakes
- 1 Tbsp smoked paprika
- sea salt and pepper
- 1 24oz jar tomato sauce
- 4 large zucchinis
- 1/2 cup grated parmesan cheese, to garnish (optional)
Instructions
- Heat the oil a large skillet over medium-high heat. Add in the carrots, onion, and celery.
- Cook until the vegetables soften, then add in the turkey meat.
- Season the meat with oregano, smoked paprika, garlic, salt and pepper. Cook the meat until browned stirring constantly and breaking it in small bites with a wooden spoon.
- Pour the tomato sauce over the meat and veggie mixture and stir until combined. Simmer for about 10 minutes on low, to let the flavors to develop.
- Meanwhile, make zucchini noodles using a spiralizer.
- Divide the zoodles onto 4 plates, or meal prep containers, top with the turkey meat sauce and garnish with parmesan cheese.
- You may keep it in the fridge for up to 4 days.
- When ready to serve, just add the zoodles to a pan, and stir fry for 2 minutes, mixing well to get them all coated with the sauce.
