Haddock Fillet with Asparagus

Ingredients
- 6 oz. skinless boneless haddock fillet (any white fish from the allowed list may be used)
- 6 large asparagus spears
- 1/2 tsp garlic minced
- 1 tbsp mixed fresh herbs, chopped (dill, parsley, thyme)
- 2 tbsp fresh squeezed lemon juice Salt and pepper to taste
Instructions
- Pre - heat oven to 400 F.
- Wash the asparagus and cut off the tough woody ends.
- Place fish fillet in the center of a large piece of foil and arrange asparagus spears in a single layer alongside fish.
- Sprinkle with salt and pepper, garlic and the mixture of fresh herbs and drizzle with lemon.
- Wrap up in foil, making sure that it is well sealed and add one more sheet if necessary.
- Place the package in a baking dish and cook in the oven for about 20 minutes.
- Use a tooth pick, while cooking to check if everything is tender and soft. Serve warm.
