Grated Egg + Avocado Toast
The Perfect Quick & Clean Protein Meal!
Ingredients
- 4 hard boiled eggs, peeled and grated/diced small
- 1/4 cup crumbled cheese (optional)
- 1 ripe avocado
- 1/4 tsp ground cumin
- 1 Tbsp fresh lime juice
- 1 cup quartered fresh cherry tomatoes
- 4 slices of rye or Ezekiel bread, lightly toasted
- sea salt and freshly ground black pepper
Instructions
- In a small bowl smash the avocado with the back of a fork.
- Season with sea salt, pepper, and add in cumin and lime juice. Stir well to combine.
- Spread the avocado mixture equally over slices of bread, then top with grated eggs, crumbled cheese and cherry tomatoes.
- Season with a pinch of sea salt and freshly ground black pepper.
