Cod with Balsamic Herb Sauce

Ingredients

  • Cod (or fish of your choice)
  • 3 tbsp balsamic vinegar
  • 1 clove garlic, minced
  • 2 tbsp fresh basil
  • 1 tbsp fresh thyme
  • ΒΌ tsp sea salt
  • 1/3 cup extra virgin olive oil
  • 2 tbsp oil

Instructions

  1. In a small bowl, combine vinegar, garlic, herbs, salt and olive oil. Whisk and set aside.
  2. Heat one large saucepan and add 2 tbsp oil. Cook filets of cod 3 minutes on first side, then flip and cook 3 minutes on the second side.
  3. Lower heat and pour sauce over fish and simmer for 1 minutes.
  4. Serve with whole grains and a side of greens of your choice.
