Cod with Balsamic Herb Sauce
Ingredients
- Cod (or fish of your choice)
- 3 tbsp balsamic vinegar
- 1 clove garlic, minced
- 2 tbsp fresh basil
- 1 tbsp fresh thyme
- ΒΌ tsp sea salt
- 1/3 cup extra virgin olive oil
- 2 tbsp oil
Instructions
- In a small bowl, combine vinegar, garlic, herbs, salt and olive oil. Whisk and set aside.
- Heat one large saucepan and add 2 tbsp oil. Cook filets of cod 3 minutes on first side, then flip and cook 3 minutes on the second side.
- Lower heat and pour sauce over fish and simmer for 1 minutes.
- Serve with whole grains and a side of greens of your choice.
