Breakfast Powerballs
Easy to make breakfast on the go that everyone on the family will love!
Ingredients
- 16 oz almond butter (you can use peanut butter or cashew butter, too)
- ½ cup raw honey or agave nectar (may vary depending on level of sweetness you prefer)
- 1 ½ cups rolled oats (whole oats, not instant)
- 1/3 cup ground-up flaxseed
- bowl full of coconut or sesame seeds
Instructions
- Mix almond butter and honey together in a bowl.
- Put oats in blender and blend until they assume a powder-like texture.
- Add oats to nut butter/honey mixture and mix well. Adjust consistency if necessary.
- Add ground flax seed and mix.
- Roll batter into small balls. Roll balls in your choice of coconut or sesame seeds.
- If you’re short on time, you can just press the mixture into a baking dish and cut it into bars. No need to roll it into balls!
Notes
Will last in refrigerator for one week. Can also make and freeze.
