Breakfast Porridge
Start your morning off with this deliciously sweet and healthy porridge.
Ingredients
- 1/2 cup cooked butternut squash
- 1/4 cup full fat organic coconut milk
- 1 pinch salt, 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 large apple
- 1 tbsp toasted coconut
Instructions
- Grate the whole apple without peeling.
- Add the apple, butternut squash, coconut milk, salt and spices to a food processor.
- Blend until smooth for about a minute.
- In a saucepan add the blended mixture and bring to a simmer, stirring occasionally.
- Cook for about 10 minutes.
- Serve warm and top with about a tablespoon of toasted coconut for each serving.
